I have several strays who have adopted me. Two of them have grey fur around their heads and on their back just behind their heads. I has been very sickly so I brought her to a vet and he told me the discoloration was the result of her sick saliva. He also said that now we are treating her, her coat should go back to grey. I was so concerned about this cat, I forgot to ask him about the other cat. She shows no signs of illness, just malnutrition. She was infested with fleas but I have since treated her with Revolution which took care of them. Could simple malnutrition be enough to cause this, or should I be looking for signs of something else?

If they had fleas then they probably have tapeworms and tapeworms can pull nutrition from the system making the fur change.
I would bring the vet a stool sample if you can to get them checked for worms and see if treating for those parasites will help the malnourished cat feel and look better.
If they are outdoor cats you can try putting out a covered litter box to see if they will use that so you can get a stool sample.
