We have a mixed breed 13 months old and she will eat anything. Today, was a typical day..she was in the house all day and only brought outside on a leash to do her business and brought back in. In the evening we noticed her eyes became very bloodshot and droopy and her face all puffy. Her head felt very hot and she kept shaking it. She kept drinking more water than usual and could sit still. It looks like an allergic reaction to something and the only thing that she did today, was jump up and take cooked bacon off the counter and ate all of it. about 3/4 of a full pound. Could it be that? or?

Yes she could be having an allergic reaction to the pork or the preservatives in the pork.
You can give her plain Benadryl if she is still showing symptoms. The minimal dose is 1mg per pound of dog so a 50 pound dog would get two 25mg tablets.
You can also expect diarrhea from this episode as all the fat in the bacon is apt to make her stomach upset.
If insects are active where you are this could also be a reaction to an insect sting or bite.
