How can I safely stop my Maltese from biting her nails? They are sooo sharp.

If her nails are sharp and so long she is biting them you need to have a groomer clip them or grind them smooth.
If they are long she is probably chewing them because they make her feet ache from walking on her toes wrong with the nails pushing the feet wrong.

She gets groomed regularly. We also have a male and there is no problem with him biting his nails. Just the female bites her nails sharp. They aren't long at all but extremely sharp. Any suggestions for something we can put on her feet to discourage her from doing it? I don't want to put a collar on her. I want her to associate biting her nails either with bad taste or disappointment. Do you have any answers for this?

You could try some Bitter Apple cream (lasts longer than the spray stuff does) and pet supply stores usually have this or the spray.
Or you could try soft paws for dogs

the groomer could put them on for you.
I'd also suggest a hard chew toy for her such as a smoked cow hoof which might keep her mouth busy on something other than her own nails.
