How old is your pet? How long have you had him/her, and what do you know about Blue Great Danes?
Often, special varieties of dogs are so specially breed that there can occur genetic problems such as you describe. Have you considered this and did you know about this before you got the dog?
I'm not sure whether you need a new Vet or not. Many times a special diet can help cure skin allergies, stomach problems, and infections. Have you tried a vet reccomended diet yet?
Sometimes pups can outgrow the type of problems your blue is having.
When I first saved our Minature Pinture at 3 & 1/2 weeks old...she was highly suseptible to skin allergies caused by the fewest amount of flee bites. She nearly died from gas and stomach problems, and she was very sickly. She had a hard start to life. I would say she was the runt...but at that age, all the pups were. Now that she is 2 & 1/2 years old...she is healthy as a hound! No more skin problems, flee allergies, infections, stomach problems, etc. (Knock on wood!)
I hope you can bring your pet around. It sounds like it will take diligence on your part to keep his skin in good condition, stomach problems to a minimum, and infections from harming him. Again, ask your vet about a special diet...but keep in mind that special breeds sometimes have special problems.
